Make French-Style Cultured Cheeses with Claudia Lucero

  • Food Innovation Center 1207 Northwest Naito Parkway Portland, OR, 97209 United States (map)

Join Claudia Lucero, founder of Urban Cheesecraft and author of One Hour Cheese, Cooking with Whey, and Instant Pot Cheese, for an evening of French-style cheesemaking and tasting.

This session will feature a live demonstration of a classic cultured cheese, with simple, approachable techniques designed for home kitchens. Claudia will share key steps, ingredients needed, practical tips, and the small details that help micro-batch home cheesemaking feel doable and repeatable.

Guests will have the opportunity to taste French cultured cheeses, participate in hands-on elements, ask questions, and connect with fellow attendees in the culinary, beverage and hospitality community.

Whether you're curious about cheesemaking or have tried it before and want a simpler, more reliable approach, this is a welcoming place to begin or get re-inspired.

Claudia will also share how to continue building your skills at home, with optional resources for those who want to keep going beyond the class.

Claudia’s DIY Cheese Kits are available through www.UrbanCheesecraft.com, Williams Sonoma, and other specialty retailers. If you would like to receive alerts for future cheesemaking classes, as well as enjoy a free 20 minute class now, sign up via this link.

Information about joining the Portland chapter of Les Dames d’Escoffier will also be available for women who would like to apply for membership.
